Healthy dinner recipes
My favorite dinner recipe is spagehtti squash with green and red peppers, zuchinni, onions and grilled chicken.
Funny you mentioned that because I just had that the other night.  Thanks for being involved in this portion of the site.  I would love to hear more.

Episode 2 got me thinkin- my brother swears by the frozen meals and I've never liked them, so when you said those weren't good for the body I started creating plan ahead, healthy recipes in my head. Went to the grocery store and stayed up till 3 am making food magic! Here are my best  so far:

Brown Rice, 1/2 Chicken breast, and asian vegetable medley (mushrooms,onions, green beans, and broccoli)

I cooked the rice and chicken but left the veggies frozen. After I preportioned them I put a little chicken stock over the top. Popped it in my freezer and microwaved it for lunch today. Just added a little soy sauce- it was as good as takeout!!

Grilled Chicken and Spinach Salad
Fresh spinach, red onion, roasted red pepper, 1 strip turkey bacon and a chicken breast.
I dressed it with a low fat honey mustard (fat free mayo, dijon mustard, lemon juice, honey)

Dinner is always a tough one for me, but i don't think you can ever really go wrong with steak, baked potatoe and steamed veggies. Portion controll is what matters

Here is one that i eat most nights of the week. 1 cup of brown rice or quinea mixed with seared tuna (6oz) with a spoon of mustard. I know it sounds wierd but my friends when tried also loved it.

SALMON SOBA
Try this Asian-inspired dish for a tasty change of pace
By Jordana Brown  Ingredients Serves 1 2 oz. soba noodles* 1 Tbsp. olive oil 1 Tbsp. lemon juice 2 tsp. rice vinegar ¼ tsp. wasabi paste* 1 pouch (6 oz.) pink salmon 1 Tbsp. roasted sesame seeds*


* found in the Asian aisle of your supermarket
Directions
1. Prepare soba according to package directions. Meanwhile, whisk together olive oil and lemon juice in a small bowl. 2. Add vinegar and wasabi, whisking until smooth. Combine all ingredients in a large bowl.

NUTRITION FACTS: 551 calories, 51 g protein, 44 g carbs, 21.5 g fat
here's a super easy one i made last night that even the kids liked!!

Southwestern Chicken Roll-Ups
mix fat free refried beans in with salsa, lowfat shredded cheese and cooked, chopped (i shred mine in a small food processor) chichen breast. (you can easily add other ingredients, like minced garlic and/or chili peppers) smooth mixture over wheat tortillas, then roll up. place side by side in baking dish, cover and bake at 350 for 20 minutes. dip into low fat sour cream when eating. its yummy and sooooo easy!  :)
